Soft Brioche Burger Buns

These soft, fluffy brioche burger buns are rich, slightly sweet, and perfect for homemade burgers. Light texture, golden tops, and bakery-style results every time.
Ingredients
Yeast Mixture
240 g warm water (40–43°C)
10 g active dry yeast
12 g sugar
Dough
420 g all-purpose flour
11 g salt
12 g sugar
1 whole egg (about 50 g, without shell)
1 egg yolk (about 18 g)
57 g unsalted butter, softened
Topping
1 egg (for egg wash)
Sesame seeds
Instructions
1. Activate the Yeast
In a bowl, combine warm water, yeast, and sugar. Let sit for 10–15 minutes until foamy.
2. Mix Dry Ingredients
In a large mixing bowl, whisk together flour, salt, and sugar.
3. Add Eggs
Whisk the whole egg and egg yolk together. Add to the flour mixture.
4. Combine
Slowly pour in the yeast mixture while mixing on low speed until combined.
5. Add Butter
Add softened butter gradually. Knead for 8–10 minutes until the dough becomes smooth and elastic.
6. First Rise
Place dough in a lightly greased bowl. Cover and let rise in a warm place for 1–1½ hours, or until doubled in size.
7. Shape
Punch down the dough and divide into 10 equal pieces (about 122g each). Shape into smooth balls and place on a lined baking tray.
8. Second Rise
Cover loosely and let proof for 45–60 minutes, until puffy.
9. Bake
Preheat oven to 190°C.
Brush buns with egg wash and sprinkle with sesame seeds.
Bake for 12–14 minutes, until golden brown.
Cool on a wire rack before serving.
