🐣 Easter Hot Cross Buns

Soft, fluffy, and filled with warm spices and sweet dried fruit — the perfect Easter bake šŸ¤


🌿 Ingredients


Dough


600 g bread flour

90 g caster sugar

2 tsp mixed spice

1½ tsp ground cinnamon

½ tsp ground nutmeg

Zest of 1 lemon

1 tsp salt

14 g dry yeast (2 Ɨ 7 g sachets)

360 ml milk (lukewarm)

50 g butter, melted & cooled

1 large egg


Dried Fruit (total 250 g)


150 g sultanas

50 g dried cranberries

60 g mixed peel


Crosses


80 g plain flour

~100 ml water

Glaze

2 tbsp golden syrup

Make the dough


In a large bowl, mix flour, sugar, spices, lemon zest, salt, and yeast.

Make a well in the center.


Add wet ingredients

Pour in the melted butter and egg. Gradually add lukewarm milk, mixing until a soft dough forms.


Knead & rise


Knead for about 5 minutes until smooth.

Place in a clean bowl, cover, and let rise until doubled (about 1–2 hours).


Add the fruit


Roll the dough into a rectangle, sprinkle over dried fruit, then fold and knead until evenly distributed.


Shape


Divide into 12 equal pieces and roll into balls.

Place on a lined tray, slightly apart.

Second rise

Cover and let rise again for about 1 hour, until puffy.


Make the crosses


Mix flour with water to form a thick paste.

Pipe crosses over each bun.


Bake


Bake at 220°C (200°C fan) for 15–20 minutes until golden.


Glaze


Warm the golden syrup and brush over hot buns for a shiny finish ✨
