🥟 Shish Barak in Yogurt Sauce with Rice

🥖 Dough


1 kg flour

20 g salt

2 tbsp olive oil

~500 ml water (add gradually)


Method:


Mix the flour and salt, then add the olive oil.

Add water little by little until you get a soft, smooth dough.

Knead well for 8–10 minutes.


✨ The key to a great dough is to let it rest.

Cover and leave it for 30–60 minutes until soft and easy to work with.


🥟 Meat Filling


1.5 kg ground meat

3 onions (finely chopped)

Salt (to taste)

Black pepper (to taste)


Method:


Cook the meat and onions over medium heat.

Season with salt and black pepper.

Cook until nicely browned, then set aside to cool.


🥣 Yogurt Sauce


Homemade yogurt (or any yogurt, not too sour)

Water (as needed)

3 tbsp cornstarch


Method:


Mix the yogurt with water until smooth.

Add cornstarch and whisk well.

Place on medium heat and stir continuously until it comes to a gentle boil.

Once it starts boiling, begin adding the prepared pieces and let them cook in the sauce.


🍚 Rice


Arborio rice

Method:


Cook the rice as usual until soft and fluffy.

💛 Serving

Serve the yogurt dish warm alongside the rice.
