Ingredients

Baklava

1 package phyllo pastry

500 g walnuts, chopped into small pieces

250 g butter, melted

Orange zest

Orange juice

Orange liqueur

Rose water

Dried edible flowers

Tiramisu Cream

3 eggs

300 g sugar

1 tsp vanilla

500 ml whipping cream

200 g mascarpone

To Finish

Cocoa powder

Method

1. Prepare the Baklava

Chop the walnuts into small pieces.

Combine the walnuts with orange zest, orange juice, orange liqueur, rose water and dried edible flowers.

Layer the phyllo pastry, brushing each sheet generously with melted butter.

Add some of the walnut mixture, then continue layering with more buttered phyllo and walnuts until finished.

Bake at 200°C for 10 minutes.

Reduce the oven temperature to 150°C and continue baking for approximately 3 hours. Rotate the baklava every 30 minutes so it bakes evenly.

When the baklava is finished, pour over the homemade syrup while it is still warm.

Allow the baklava to cool completely.

2. Make the Tiramisu Cream

Place the eggs, sugar and vanilla in a heatproof bowl over a bain-marie.

Whisk continuously until the mixture becomes pale, fluffy and approximately doubles in volume.

Remove from the heat and allow it to cool slightly.

Whip the whipping cream and mascarpone until thick and smooth.

Once the egg mixture has cooled slightly, gently incorporate it into the whipped mascarpone and cream mixture.

3. Assemble

Once the baklava has cooled completely, spread the tiramisu cream over the baklava layers.

Dust generously with cocoa powder.

Refrigerate for approximately 4 hours before serving.

Serve chilled.
