🫓 For the dough

1 kg flour

1 tbsp salt

1 tsp baking powder

400 ml water, added gradually

🥩 For the meat topping

2 kg ground beef

2 red bell peppers

2 green bell peppers

4 garlic cloves

2 spring onions

2 onions

1 bunch parsley

4 tomatoes

Salt, to taste

Black pepper, to taste

Pomegranate molasses, to taste

Tomato paste, to taste

Pepper paste, to taste

👩🏻‍🍳 Method

1. Make the dough

Add the flour, salt and baking powder to a large bowl. Slowly add the water while kneading until you have a soft, smooth dough. Don't add all the water at once—add it gradually until the dough feels right.

Cover and let the dough rest.

2. Prepare the meat mixture

Add the red peppers, green peppers, garlic, spring onions, onions, parsley and tomatoes to a food processor. Blend until finely chopped.

Add the tomato paste, pepper paste, pomegranate molasses, salt and black pepper. Mix well.

3. Add the meat

Add the vegetable mixture to the ground beef and knead everything together really well until completely combined.

4. Shape the lahmacun

Divide the dough into portions and roll each one out very thin. Spread a thin, even layer of the meat mixture all over the surface, right to the edges.

🔥 Baking the Lahmacun

Preheat the oven to 250°C.

Put the cast-iron pan/plate inside the oven while it is preheating.

Start this before you even make the dough, so the cast iron has plenty of time to get extremely hot.

Once the dough is rolled very thin and the meat mixture is spread over it, carefully place the lahmacun onto the hot cast iron.

Bake at 250°C until the edges are crisp and the meat is cooked through.

That hot cast iron is the little secret that gives you that beautiful lahmacun-style base. 🔥😍
