The Kitchen Fairy’s Cozy Chicken, Rice & Chardonnay Soup

Serves 6

Ingredients

3 chicken breasts, cut into small pieces

1 cup rice

3–4 potatoes, diced

1 medium onion, finely chopped

2 cloves garlic, minced

3 tbsp olive oil

1 cup Chardonnay

2.5–3 liters chicken broth or water

Salt and black pepper to taste


Oven-Baked Cherry Tomato Purée

300–400 g cherry tomatoes

1 small onion, sliced

2 tbsp olive oil

Salt

Garnish

Edible flowers


Instructions

Heat olive oil in a large pot and sauté the chopped onion and garlic until soft and fragrant.

Add the chicken breast pieces and cook for a few minutes until lightly sealed.

Add the diced potatoes and rice. Add the Chardonnay,simmer then pour in the broth and bring to a gentle simmer.

and cook for about 20–25 minutes, until the rice and potatoes are tender and the chicken is fully cooked.

Season with salt and black pepper to taste.

Then blend the soup till u have a smooth texture.


Cherry Tomato Purée

Place the cherry tomatoes and sliced onion on a baking tray.

Drizzle with olive oil and sprinkle with salt.

Roast at 180°C (350°F) until soft and slightly caramelized.

Blend or mash into a smooth purée.

To Serve

Ladle the soup into bowls, add a spoonful of the roasted cherry tomato and onion purée on top, and finish with delicate edible flowers.
