320 g Medjool dates, pitted and roughly chopped
1⅛ teaspoons baking soda (about 6 g)
240 ml boiling water
1 teaspoon instant coffee (optional)
Date Cake
165 g all-purpose flour
7 g baking powder (1½ teaspoons)
50 g brown sugar
Pinch of salt
85 g unsalted butter, room temperature
2 large eggs, room temperature
60 ml milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon (optional)
Toffee Sauce
200 g brown sugar
300 ml heavy whipping cream
85 g unsalted butter
1 teaspoon vanilla extract.
