I decided its time to get back on the track!
By that i mean back to my old self , enjoying baking and cooking ,sharing the passion with others , for me its simply the smile i get after people trying my food ☺️, making them feeling better or even warm .
Thats why i started with making pasta from scratch like i used to do , simple and easy recipe and vegetarian friendly !
You will need
Pasta flour 00
Eggs
Water
Charcol powder(for food)
Pasta machine
Pasta accessories
The dough
270 g flour
2 tablespoons charcol powder
1 tablespoon water
4 eggs
If the dough get sticky add more flour
I normaly add semolina but i tried a new way , i still find the semolina ita better for the dough coz it will make the texture stronger which i prefer!
Just follow the video its easy mixing the eggs , charcol, water on high speed using hand mixer then start sifting the flour and keep mixing then start kneading the dough , then wrap it with plastic wrap and set a side.
For the normal dough
I like to speead the flour on working top then add the eggs start mixing then start kneading , Same method so easy , when your done wrap again in plastic wrap and set aside to rest .
Mean while make the filling
400g ricotta
1 lemon juice and zest
Salt
Pepper
Parmesan
Mix all together using hand mixer pour into piping bag put it in the fridge till you ise it .
Sauce , i made the easiest recipe
200 ml cream
400 g mushrooms( any kind you prefer)
Salt
Pepper
Garlic
1 onion
Sage
Butter to cook
