What exactly are manaqish?

Manaqish are almost the Middle Eastern equivalent of homemade flatbread pizzas. The word Manaqish is rooted in the Arabic verb naqash, which literally means to sculpt, or carve out. After the dough has been rolled flat, it is pressed by the fingertips to sculpt little dips for the topping to sit in.


i did some research so i can share it in the simplest way

so you know the right info ..

is the traditional cuisine of theLevant, known in Arabic as the Bilad al-Sham and Mashriq, which covers a large area of the Eastern Mediterranean. ... Perhaps the most distinctive aspect ofLevantinecuisine is meze including tabbouleh, hummus and baba ghanoush.

i love meze we grew up eating meze ..hummus is my favorite

i make it myself better taste so good



now lets get back to manaqish

this is my way i like it crispy .. i made it today

so first the dough should rest and rise for an hour

then shape it into small balls weighted 150 g

then let it rest for 10 minutes then shape again into 75g

let it rest for another 10 minutes ..

then start rolling i did open it with my hands ..

then start the oven to the max mine is 250c

bake for 10 minutes ..

fresh home baked and yummy

you can have it with tea or yogurt ..


RECIPE

1 kg flour

2 tlsp yeast

1 tsp sugar

1 tsp salt

1 1/2 cup oil

2 1/2 cup milk


Method


combine flour, salt,sugar, and oil

 Work the mixture with your hands. Now,

make a well in the middle and pour in the yeast and milk . Stir until soft dough forms,

knead for 10 minutes or until dough is elastic, smooth, and no longer sticky (as you knead, if dough is too sticky for you, you can sprinkle just a tiny bit of flour to help it).

Form dough into a ball and place in a lightly oiled mixing bowl. Cover with damp cloth and place in a warm spot (inside a warmed but turned-off oven is a good place). Leave to rise for 1 hour .

then start forming into small balls just like i i mentioned it before.
