168 g butter, softened
900 g milk, room temperature
Baking Soda Bath
2.8 kg water
330 g baking soda
54 g salt

1. Make the Dough
In a large mixing bowl, combine flour, yeast, sugar, and salt.
Add softened butter and milk.
Mix until a dough forms, then knead for 8–10 minutes until smooth and elastic.
Cover with a clean towel and let rise in a warm place for 1–1.5 hours, until doubled in size.

Divide the dough into equal portions.70 g
Roll each piece into a long rope and shape into classic pretzels or soft buns.
Place them on a tray while you prepare the bath.

3. Prepare the Baking Soda Bath
Bring water to a boil. Carefully add baking soda and salt (it will bubble).
Reduce to a gentle simmer.
Dip each pretzel for 20–30 seconds.
Remove with a slotted spoon and place on a lined baking tray.

Sprinkle with coarse salt, seeds, or cheese.
